Instant Pot Egg Salad



A creamy and delicious Instant Pot Egg Salad that's perfect for sandwiches or as a side dish. The Instant Pot makes hard-boiled eggs a breeze to prepare.

Ingredients:

  • 6 large eggs
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions:

Add the steaming rack and 1 cup of water to the Instant Pot

Put the eggs on the rack and shut the lid

Turn the Instant Pot on and let it work at high pressure for 5 minutes

After the eggs are done cooking, quickly let the pressure out and move them to a bath of ice water to cool down quickly

Once the eggs are cool, peel them and cut them up

Put diced celery, diced red onion, chopped fresh parsley, and Dijon mustard in a bowl

Mix the ingredients together

Mix in the chopped eggs until everything is well mixed

Add pepper and salt to taste

Put it in the fridge for at least 30 minutes before you serve it

If you want, add more parsley as a garnish
