Ingredients:
- 1 lb dried black beans
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, diced optional
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bay leaf
- Salt and pepper to taste
Instructions:
Rinse the black beans under cold water and remove any debris
Place the rinsed beans, diced onion, minced garlic, and jalapeno pepper if using into the slow cooker
Add vegetable broth, cumin, chili powder, bay leaf, salt, and pepper to the slow cooker
Stir to combine all ingredients
